Family Owned & Operated
It starts with the Vegan Nova Taco Food Truck. After spending 16 years in the construction industry, Stephanie Coolidge decided to end her Project Management career and do what she loved, cook.

With the help from her family & close friend, Shannon Roberson, they bought and built a Food Truck selling Vegan tacos in the Metropolitan Detroit area.

In November of 2022, Vegan Nova opened a brick & mortar location in Pontiac, MI expanding their all-vegan menu.
Vegan Nova's menu is a "love-letter" to the vegan community.

We features fresh, colorful, beautifully plated dishes, with an emphasis on keeping food in its whole form. Vegan Nova specializes in transforming traditionally non-vegan favorites, into vegan-friendly delicious dishes. We make everything in house, from scratch.
